Looks as though we are not going to be released from our lockdown anytime soon and, if you are anything like me, you are finding the need to cater for the whole family for lunch and supper a new (and quite burdensome) chore. You might also be getting a bit fed up of your tried and tested staples so I thought I’d share a handful of super easy, store cupboard ingredient recipes to refresh your repertoire.

Pea, mint & ham soup
Lardon pieces (or the end of a ham, or left over bacon)
A good handful of mint leaves
Stock (chicken or vegetable works best and a stock cube will do if needs must, ham stock can be a bit too salty)
Fry the lardons in a soup pan, tip in the defrosted peas, add enough stock just to cover the peas, season lightly (the ham might be salty and it’s easy to adjust later), bring the pan to the boil but don’t allow it to simmer for more than a minute or so or the peas will lose their vibrant colour. Add your mint leaves and whizz in the liquidizer or with a stick liquidizer. Taste and adjust seasoning. If the peas are not as sweet as usual, you might need a touch of sugar.
To make this soup extra special , drizzle with truffle oil to serve. You could even be super chef-y and add a little foam!
